Run by Nikolaus and Carolin Bantlin, their eight hectares of vines grow from limestone-rich soil, surrounded by olive, almond and fig trees, as well as garrigue vegetations, most commonly thyme and rosemary, that thrives on the limestone slopes of the Mediterranean coast (the domain is only five kilometre from the sea). This rejection of monoculture brings with it wild flora and fauna that keeps the soil alive and healthy.
