This 3-session wine course is a true grape to glass exploration of the many factors and decisions that shape what ultimately ends up in our wine glass. Students in this course will gain an understanding of how variables of site, winemaking decisions and even storage and service result in the diversity of wines on the market. A flight of wines that underscore these concepts will be introduced and tasted as part of each session.
Who should attend: This course is ideal for students who want to gain a deeper understanding of wine. No prior experience or knowledge is expected for attendance in this course.
Session 1: The Grape and How it Grows
In this class, we will explore two things: 1) how the grape variety itself impacts style characteristics and 2) how factors of site such as soil, climate and topography shape the grape's personality and influence acid, tannin, body and aroma/flavor profile.
Session 2: How Wine Gets Made -- The Human Touch
This process-focused class examines how winemaking decisions can both emphasize and alter the building blocks established in the vineyard. Basic winemaking techniques will be explored as will techniques for specific wine style categories such as rosé, sparkling and fortified wines.
Session 3: Getting Wine Into the Glass -- Storage and Service
In this class, we will discuss -- and taste! -- how storage and service decisions alter the character and quality of wine, whether for better or worse. Glassware, service temperature and food pairing will all be explored.
