The mantra at Louis Michel is to let the nature express it fully. Namely this brings to the quest for the perfect Chardonnay in an area which is blessed by rich and unique terroirs and specifically by its Kimmeridgian and Portlandian subsoil. At the winery, the guiding principle has always been that wines are made in the vineyard so at every stage, human intervention is kept to the strictest minimum. The respect for the terroir is considered the priority and the quest for absolute discretion goes on by only using natural yeast and above all by vinifying all the wines in stainless steel tanks. This neutral material does not have any effect on the natural qualities of the chardonnay grapes and this approach is certainly apparent in the Louis Michel & Fils style where wines exude finesse, purity and freshness. Louis Michel was one of the first in the 1960s to completely turn away from maturation in barrels thinking that nothing else was needed for a grape and a terroir as unique and expressive as Chardonnay and Chablis. This remains the Domaine’s signature and Louis Michel & Fils Chablis is now a reference for stainless steel maturation throughout the world.
Louis Michel & Fils has always been a family business, and is now managed by Guillaume Michel, who takes great pride in perpetuating the Domaine’s ethos. Parisian-born, he left a career in marketing to go back to Chablis where his family has been making wines since the 19th century and to make sure that a sense of excellence is passed down from generation to generation.
The Domaine’s vineyards cover all four appellations: Chablis Grand Cru, Premier Cru, Chablis and Petit Chablis, offering the whole range of aromas that this unique wine can produce. The Domaine makes three prestigious Grand Crus – including the legendary Grenouilles – as well as seven Premier Crus. The family vineyard, whose vines are 45 years old on average, is located in the heart of the original Chablis terroir, on the most prestigious parcels within a radius of two kilometres from the winery.
