Born in Quebec, Patrick started in the Restaurant business in Montreal before his arrival in Burgundy in 2000 for 2 months of harvest at Olivier Leflaive in Puligny Montrachet. It is a few years later in Chablis with Jean Marie Guffens that he learnt the importance of terroir and micro vinification. Patrick set up on his own in 2008. To this day he doesn’t own vineyards but has established long-term partnerships with his growers in some of the best lots in Chablis. Selecting the fruit from old vines, hand harvesting, and use of a vertical press are paramount factors in the superb quality of his wines.
