Everleaf was created by Paul Mathew, a marine conservation biologist and former bartender, which tells you exactly what kind of brand this is. Forest is their tropical expression — vanilla, saffron, cherry blossom, sandalwood — built around plants that are sustainably and ethically sourced. A percentage of every sale goes to habitat conservation. On the palate it's bittersweet and complex, closer to an amaro or Campari than a gin alternative. Brilliant in a spritz over ice with soda and an orange twist. One of the most sophisticated nolo aperitifs available — the kind of thing a serious cocktail bar would actually put on its menu.
